Jean-Félix Frichot is the radiant face of Le Trou Gascon. The son of a restaurateur, he has been in the dining room since his teenage years, driven by a passion for service and wine expertise. Having worked with the Experimental group and Le Perchoir in Paris, Jean-Félix also honed his skills in wine and cocktails in Australia, eventually becoming a bar manager in Perth. Here, he curates the cocktail menu and selects organic, biodynamic, or natural wines that resonate with him and reflect the craftsmanship of the winemakers he admires.
