Meet the team

Opened in 1973 near Place Daumesnil, Au Trou Gascon was the domain of Chef Alain Dutournier for 50 years. This Parisian institution, which reached its peak in the late 1980s, is now writing a new chapter in its gastronomic story. Grégory Reibenberg (La Belle Équipe, Basique, Scaria), the happy new owner, has brought in the highly talented chef Sarah Chougnet-Strudel, already renowned for her restaurant Regain in Marseille. In the dining room, Jean-Félix Frichot, the restaurant director and Gregory’s partner, welcomes guests and presents an exciting menu of wines and cocktails. With this young duo passionate about traditions at the helm, the space has also undergone a beautiful transformation. Interior architect Clémentine Nguyen (Studio Élémentaire) has drawn inspiration from the venue’s history, its moldings, and Parisian roots to create a contemporary space where the open kitchen faces an elegant and warm dining room. The homage to bourgeois bistros blends with a bold signature cuisine.
