History

Opened in 1973, on the edge of Place Daumesnil, Au Trou Gascon was the stronghold of chef Alain Dutournier for 50 years. This Parisian institution, which reached its peak in the early 1980s, is now writing a new chapter in its gastronomic history. The fortunate new owner, restaurateur Grégory Reibenberg (La Belle Équipe, Basique, Scaria), has enlisted the highly talented chef Sarah Chougnet-Strudel, already at the helm of the acclaimed Regain restaurant in Marseille. In the dining room, it’s Jean-Félix Frichot, restaurant manager and partner of Grégory, who welcomes guests and presents a delightful wine and cocktail menu. With this young and passionate duo in charge of both tradition and innovation, the dining experience has also undergone a beautiful transformation. Interior architect Clémentine Nguyen (Studio Élémentaire) has embraced the history of the space, its moldings, and Parisian heritage, creating a contemporary environment with an open kitchen that faces an elegant and inviting dining room. The homage to bourgeois bistros sits alongside a bold, signature cuisine.
