Supplier Profile: Domaine la Calmette

When the Causse du Quercy graces your table

At Le Trou Gascon, we believe that wine is much more than just an accompaniment: it is the soul of a meal. To enhance our Landes specialties, we sought out wines that tell a story of land and conviction. That is how we crossed paths with Domaine La Calmette.

More than just a listing on our menu, it’s a true favorite—a vibrant, dynamic vineyard nestled in the hills above Cahors.

The revival of Malbec: the purity of the Causse

What makes La Calmette’s wines so special? Their energy and brilliance.

Led by Maya Sallée and Nicolas Torturier, this 7-hectare estate cultivates its vines with a radical philosophy: absolute respect for life. Here, no chemicals, but a biodynamic approach that allows them to extract the quintessence of Malbec (the famous Côt) and Merlot.

“Choosing La Calmette means offering our customers a Cahors that defies clichés: refined, easy-drinking wines with incredible minerality, expressing the limestone of Quercy.”

An exceptional estate, responsible farming

Working with La Calmette also means sharing a vision of the agriculture of tomorrow. We were won over by their commitment:

  • Biodynamics: Living soils and vines tended with natural preparations for juices of great purity.
  • Plot-by-plot work: Each cuvée reflects the precise identity of a terroir, from the freshness of "Vignes de l'Ermite" to the depth of "Serpents."
  • Few inputs, lots of attention: Natural winemaking to let the grapes express themselves without artifice, guaranteeing an unadulterated emotional experience with every tasting.

Le Trou Gascon: Your rendezvous with the terroir

Whether paired with our famous cassoulet, crispy duck confit, or a cut of Chalosse beef, La Calmette wines bring that elegance and tension that awaken the palate.
